There are 1/72 kits of the Type-IIA and CV-707 Vesikko which appears to be quite detailed. The instructions have some schematics of the details and there are also plan and side views with colour schemes.
Looking through the AMP website I found that they have several documents on U-boats to download, including one with specific details of different Type-II variants and individual boats;
The full resolution Typ-II docking plans can be found on the Dreadnought project website at the following link, along with a number of other ship drawings (mainly late 19th century, early 20th century). There is also a drawing of the WWI SM U63-65.
In addition there are a few photo's of a nice cutaway conversion of a 1/72 Typ-II on the Association of Model submariners site which shows nicely the internal structure arrangement and layout;

This man built a Type 2 out of styrene. I've always wanted to try this. Actually I did once with a Nautilus that turned out well. I've had second thoughts about making a master, molds and hull kits. I don't need the money or the trouble. I turn 70 in March it's just time for me.
As soon as I finish up my current project I'll start on the Type 2 build at 1/35 scale.

There were several different versions of the type II submarine. Nautilusdrydocks actually offers 3D files for a type IIC. They are not super detailed, but a good starting point for something more detailed. I bought those myself and I'm gathering add-on parts for it and also modified the existing files.
There are also kits out there for type II submarines. The kits are small, but they have many details one can use as an example for scratch building.
I'm not a big fan of 3D printing myself. I've built some 3D printed models and in the time it took me to sand off all those ripples and fill them I could have hand mastered an entire hull from scratch. I enjoy hand mastering just about anything because I can. I'm looking forward to making bulkheads and skinning styrene. Fun to do.
