When I File, Grind or Cut a flat on a motor shaft I use some blue tape with the sticky side out and the motor shaft poked thru. This way when cutting, the filings don't get sucked into the workings by the magnets - then when your done the tape is folded over the shaft and all the filings are wiped off with the tape-

The plastic bag trick is also pretty slick-
I too hate Dremeling the flats-I find that a file is easier to produce a flatter flat-the shafts are not hardened and there is less chance of going too deep-Just my OCD!
Oh, on this subject...I forgot to mention that I line the flat up with the setscrew for the motor bell or anything else needed to reference where the flat is to facilitate finding its position when assembling.
