Mine has got to be the GoldenEye and the Lotus submarine...
I found a slot car body of the Lotus, and used the electronics from the little airplane submarines I've been working on. Does pretty well, it definitely wants to dove with speed, apparently the "real" one did too. In a lot of the clips from the movie you can see the forward dice planes deflected fully up.
